French Toast with Bolos Levedos
I'm not Acorean, I'm a mainland Portuguese American with family from Lisboa. That being said, my good buddies in The Portuguese Kids are, and they've introduced me to so many foods from the Azores. One of my favorites - Bolos Levedos. They may look like an English Muffin, but they are not dry and way sweeter! They are so versatile, so let me show you how to French Toast them up!

- 1 Bolo Levedo, split in half
- 2 Eggs
- 1 tsp Cinnamon
- 1/3 cup Milk
- 1/2 cup Sliced fruit of choice
- Maple Syrup to top
- 1 tbsp Butter
In a bowl, mix together Milk, Eggs, and Cinnamon
Dredge the bolo slices in the mixture, coating both sides
Start flat pan with butter, on medium high heat
Once butter is melted and hot, add the bolos
Cook on each side just a few minutes, ensuring not to burn
You can move heat to medium, and back to medium high, adjusting as needed - not to burn
Serve topped with fresh fruit, powdered sugar if you have it, and Maple Syrup
