Tomatoes Recheados com Atum Receita / Stuffed Tomatoes with Tuna Recipe

I have to admit, I had never heard of this recipe before trying to make it. I gave it a shot and was not disappointed. This makes a great appetizer, or something served with a fresh side salad. If you don’t like tomatoes, maybe this dish isn’t for you, but if you do like tomatoes, you will love this! It’s light and refreshing, and perfect to get the appetite going.

- 4 Big Tomatoes
- 2 tbsp Olive Oil
- 1 Leek
- 2 Cans Tuna Fish
- 1/4 Cup Olives (sliced)
- 1 Cup Shredded Mozzarella Cheese
- Salt and Pepper to taste
- Oregano for garnishing
Cut the tops of the tomatoes, making lids
Scoop out the insides, and cube them up, remove any water/seeds
Start pan at medium/high heat with Olive oil, Leeks, Bay Leaf
When the leeks start to soften, add in the cubed tomatoes
Once well mixed, add Tuna, continue to mix
Season with Salt and Pepper
Add olives, remove bay leaf, remove from heat
Add half of the Cheese and all of the Oregano, mix well
Fill the tomatoes with the tuna filling, and top with the rest of the mozzarella cheese
Top each tomato with its lid
Bake at 375 for 35 Minutes
