Portuguese Burrito

Every once in a while, I go way off track and start mixing things up in the kitchen. This time, I made a burrito, and I went at it Portuguese style! You're favorite churrasco style piri piri chicken in a burrito!? I bet you're hungry just reading this. You can cube, chop, or shred the chicken..whatever you prefer!

Ingredients
  

  • 1 cup Rice
  • 1 lbs. Chicken
  • 1 quarter Linguiça
  • 1 pack Burrito Tortillas
  • 1 cup Shredded Cheddar Cheese
  • 2 Limes
  • 1 Avocado
  • 1/2 Onion
  • 4 cloves Garlic
  • 1/4 cup Cilantro
  • 1 large pinch Salt
  • 1/2 tsp. Pepper
  • 1 tsp. Paprika
  • 1 tsp. Cumin
  • 1 tsp. Fajita Seasoning (Optional)
  • 1 tbsp Massa de Pimentao
  • Piri Piri to taste

Instructions
 

  • Bring 1 1/2 cups of water to a boil with Onion and Garlic
  • Once boiling, add rice, salt and fajita seasoning
  • Cover, lower heat to low, 10 minutes
  • Turn burner off, let sit covered, 10 minutes
  • Fluff with fork
  • Marinade chicken with salt, pepper, paprika, cumin, massa de pimentao, olive oil, bay leaf, and piri piri
  • Preheat grill on high, close lid until temperature reaches 450F
  • Lower to medium heat, and add chicken breasts and linguiça
  • Grill on each side about 10 minutes, chop up chicken and linguiça
  • Assemble Burritos with rice, chicken, linguiça, avocado, sour cream, cilantro, and lime juice, and cheese
