Caril de Camarão

For better or worse, Portugal has a history of many colonies all over the world. Thus, we were able to adapt aspects of global cuisines. This time, we're heading to India, Goa to be exact. This Caril, or Curry, includes the spices and flavors of the curry paste, and the sweetness of the Coconut Milk. Perfectly served with white rice!

Ingredients
  

  • 1 lbs Shrimp, peeled
  • 1/2 Onion, chopped
  • 4 cloves Garlic
  • 1 unit Grated Ginger
  • 1 can Diced Tomatoes (if fresh, use 2 tomatoes)
  • 1 can Coconut Milk
  • 2 tbsp Chopped Cilantro
  • 1 Lime
  • 1 tbsp Red Curry Paste
  • 1 tbsp Olive Oil
  • 1 tsp Salt

Instructions
 

  • Heat Oil in a pan, add chopped onion let saute 1-2 mins.
  • Add Garlic, Ginger, and Curry paste and brown for another minute.
  • Add Diced Tomato with its liquid, Coconut milk, and season with salt. Let cook on medium/high heat for 5 minutes. Continue stirring to smooth milk.
  • Add Shrimp, stir, and cook until shrimp begins to change color.
  • Add lime juice, lime zest, and chopped cilantro. Let cook for another 30-45 seconds.
  • Remove from heat, and serve hot. Accompany with rice.
