If you go to a Portuguese restaurant, you're sure to see someone order a flaming appetizer....literally. That's called Chourico a Bombeiro, or in this case - Linguiça à Bombeiro. Linguiça is similar to Chourico, only it is made with a different type of casing, and it is slightly milder. Grab some high proof alcohol, and we've got ourselves a flaming dish.
Fill the Clay pig with 2 shot glasses of the chosen alcohol
Add the Linguiça to the racks
Light the alcohol directly, it will catch on fire. The fire may be hard to see at first, but do not assume it is not lit! The clear/blue flame will begin to turn orange/yellow as the grease drips from the sausage
Cook for 10 minutes, flipping halfway through. The fire should burn out after 10 minutes, or be low enough that it can easily be blown out
I prefer to do this outdoors, in my backyard, with a heat resistant dish underneath
