Linguiça à Bombeiro

If you go to a Portuguese restaurant, you're sure to see someone order a flaming appetizer….literally. That's called Chourico a Bombeiro, or in this case – Linguiça à Bombeiro. Linguiça is similar to Chourico, only it is made with a different type of casing, and it is slightly milder. Grab some high proof alcohol, and we've got ourselves a flaming dish.

Equipment

  • 1 Porquinho Portugues
  • 1 Lighter

Ingredients
  

  • 2 shots Aguardente (Can use Rum 151)
  • 1 Linguiça

Instructions
 

  • Fill the Clay pig with 2 shot glasses of the chosen alcohol
  • Add the Linguiça to the racks
  • Light the alcohol directly, it will catch on fire. The fire may be hard to see at first, but do not assume it is not lit! The clear/blue flame will begin to turn orange/yellow as the grease drips from the sausage
  • Cook for 10 minutes, flipping halfway through. The fire should burn out after 10 minutes, or be low enough that it can easily be blown out
  • I prefer to do this outdoors, in my backyard, with a heat resistant dish underneath
