Portuguese Burrito
Portuguese Burrito
Every once in a while, I go way off track and start mixing things up in the kitchen. This time, I made a burrito, and I went at it Portuguese style! You're favorite churrasco style piri piri chicken in a burrito!? I bet you're hungry just reading this. You can cube, chop, or shred the chicken..whatever you prefer!
Ingredients
- 1 cup Rice
- 1 lbs. Chicken
- 1 quarter Linguiça
- 1 pack Burrito Tortillas
- 1 cup Shredded Cheddar Cheese
- 2 Limes
- 1 Avocado
- 1/2 Onion
- 4 cloves Garlic
- 1/4 cup Cilantro
- 1 large pinch Salt
- 1/2 tsp. Pepper
- 1 tsp. Paprika
- 1 tsp. Cumin
- 1 tsp. Fajita Seasoning (Optional)
- 1 tbsp Massa de Pimentao
- Piri Piri to taste
Instructions
- Bring 1 1/2 cups of water to a boil with Onion and Garlic
- Once boiling, add rice, salt and fajita seasoning
- Cover, lower heat to low, 10 minutes
- Turn burner off, let sit covered, 10 minutes
- Fluff with fork
- Marinade chicken with salt, pepper, paprika, cumin, massa de pimentao, olive oil, bay leaf, and piri piri
- Preheat grill on high, close lid until temperature reaches 450F
- Lower to medium heat, and add chicken breasts and linguiça
- Grill on each side about 10 minutes, chop up chicken and linguiça
- Assemble Burritos with rice, chicken, linguiça, avocado, sour cream, cilantro, and lime juice, and cheese
