Arroz Seco no Forno
There are plenty of ways to cook rice. And in Portugal, there is no shortage! This one is a bit different though. Not only are we using already boiling water, but we're going to cook this Portuguese Rice in the oven, in a clay pot! What you'll get is a nice toasty rice, kind of crunchy, but kind of delicious too! From Lisboa to the north, Arroz seco no forno can accompany many meats and fish.
Ingredients
- 1 cup Long grain rice
- 2 cups Boiling Water
- 1 Onion
- 2 tbsp Olive Oil
- 1 Chicken Bouillon Cube
- 2 tbsp Parsley, chopped
- Salt, Pepper to taste
Instructions
- Start pot on medium high heat with Olive Oil, Onion, Garlic, and Parsley
- Cook for 2-3 minutes, add rice and chicken bouillon cube, salt and pepper
- Cook until rice begins to turn golden, add boiling water
- Bring back to boil, Let boil for 1 minute, remove from heat
- Dump contents into an Oven Safe dish/Clay Pot
- Add chourico slices on top
- Cook at 495F for 20-30 Minutes, until you're happy with the crispiness
