Bitoque de Frango
Bitoque is a very traditional Portuguese dish, usually made with a steak. But if you're like me, and have a wife who doesn't like red meat, you find ways to improvise. I came up with my version of a Chicken Bitoque, in case you need your own alternative!
Ingredients
- 1 lbs Thin sliced chicken breast
- 1 Egg
- 2 tbsp Olive Oil
- 1 tbsp Butter
- 5 cloves Garlic
- 1/2 cup Vinho Verde or White Wine
- 1 tbsp Mustard
- 1 tbsp Massa Pimentao
- 1 Bay Leaf
- Salt, Paprika, and Pepper to Taste
- French Fries, White Rice, Salad
- Slice of ham (optional)
Instructions
- Season Steak with salt, pepper, paprika, bay leaf, and garlic
- Let sit for at least 15 minutes
- In a pan, add Olive Oil and Butter at medium High Heat with Bayleaf
- Cook chicken on each side for 3-5 minutes
- Add Vinho Verde, Massa Pimentao, and Mustard
- Cook and Baste for about 2 minutes, until sauce thickens
- In a separate pan, cook a sunny side up egg in just a bit of olive oil
- Baste the egg so that the top will cook a bit as well
- Top the Chicken with the Egg and a slice of ham
- Serve with Fries, Rice, and a Salad
