Frango Assado no Forno
A simple, one tacho meal, this is perfect if you're not in the mood for a ton of steps. Season, marinade and roast, simple as that! Portuguese food doesn't have to be complicated, but it does have to smell and taste delicious, am I right?! Vamos Embora!
Ingredients
- 2 Quarters Chicken
- 1 lbs Potatoes, cubed
- 2 Lemons
- 1 stick Butter
- 3 Bay Leaves
- 1 Knorr Chicken Cube
- 3 cloves Garlic
- Olive Oil
- 1 cup Vinho Verde
- Piri Piri, Salt, Pepper, Paprika, Cumin
Instructions
- Line the bottom of an oven safe dish with sliced Lemons.
- Scrub the chicken with lemon, and squeeze the juice over it. Place Chicken on lemon slices.
- Season with salt, pepper, paprika, cumin, bay leaf, and olive oil
- In a bowl season potatoes with Olive Oil, Salt, Pepper and Paprika
- Add potatoes to the chicken dish, and pour potato marinade over the whole thing
- Drizzle piri piri and vinho verde over the whole dish and crumble a Knorr Cube throughout. Cut up the butter into pieces and place it around the top of the food
- Bake at 395 for 1 hour and 15 minutes, be sure not to burn the skin
