Frango Guisado com Massa (or Esparguette)
This is one of those home comfort foods. My mom used to whip up a huge pot of this every other week, and we always had fresh bread to dip in the sauce! It's not a hard prep, and it only takes one pot, this is a no brainer if you're looking for a hearty and delicious Portuguese dish that can feed the whole family.
Ingredients
- 1 box Pasta
- 1 lbs Chicken (bone in or boneless)
- 1/2 Chourico
- 1 Onion
- 5 Garlic Cloves
- 2 Tomatoes
- 1 Bay Leave
- 1 tbsp Massa Pimentao
- 3 tbsp Olive Oil
- 3 tbsp Butter
- 2 tbsp Piri Piri
- 1 1/2 cup White Wine or Vinho Verde
- 2 tbsp Tomato Paste
- 1 Chicken Bouillon Cube
- Salt, Pepper, Garlic Powder
Instructions
- Start big pan with Olive Oil, Butter, Garlic, Bay Leaf, and Onion
- Add Chouriço, continue to sauté, start seasoning
- When things start smelling great, add chicken, sauté on medium high heat for about 5 minutes
- When chicken is 90% cooked, add tomato, tomato paste, piri piri, massa pimentao, and enough Vinho to cover the whole thing
- Bring to a boil, add Chicken Bouillion cube
- Reduce heat to high, and cook for 10 minutes
- Add Pasta, and enough Wine/Water to cover all of it
- Boil until Pasta is tender, about 10 minutes
- Let sit for 5-10 minutes before serving, it will be piping hot!
