Chouriço and Queijo Balls
I'm not going to lie to you guys, I basically made this one up as I was going along! I knew that I wanted to make some sort of Salgado type appetizer, but wanted to try something new. This snack gives you that crispy crust, but smooth inside with the potatoes. It's truly a finger food any Portuguese or non Portuguese is going to love! You can use Chouriço or Linguiça on this one!
Ingredients
- 6 Small Potatoes
- 1/4 Chouriço or Linguiça, cubed
- 1/4 cup Portuguese Cheese, cubed
- 1 cup Breadcrumbs
- 2 cups Oil for cooking
- 2 Eggs
- 1/4 cup Milk
- 1 tbsp Butter
Instructions
- Boil a pot of water, and add potatoes. Boil until tender about 25 minutes
- Drain water from Potatoes, let cool
- In a separate pot, combine butter and milk, do not let burn or overflow
- Mash the potatoes with your masher of choice, season with salt/pepper, and add milk and butter mixture
- Mix until you're happy with the consistency
- Once cooled, roll potatoes into balls, stuffing the center with Chouriço and Cheese
- Coat each ball with egg and breadcrumbs, double coat for crispier finish
- Fry in Oil, move constantly so they do not sink/burn to the bottom
- Let cool on paper towels to drain oil before serving
